Westport Butchery Supplies Burgeoning Breakfast Business in Bridgeport

BRIDGEPORT, Conn. — Eric Felitto figures he puts in about 60 hours a week as the chef at The Chelsea, a popular gastro pub in Fairfield.

So how on Earth does he turn around and get up at 5 a.m. to open The Tasty Yolk, a food truck making a splash on Bridgeport’s breakfast scene?

“For now, we’re young and we can do it,” Felitto said with a laugh. “When you’re on the truck, it’s not like your at work. You’re not working for someone else. This is ours.”

The Tasty Yolk is the brainchild of Felitto and Mike Bertanza, a childhood friend who is a bank manager at Fairfield County Bank, within walking distance of The Chelsea. 

The Fairfield High School grads have been thinking up business ventures since they were 5 years old.

“We were always talking about how we’d make our fortune,” Felitto said.

“We’ve been talking about doing a food truck for three years,” said Bertanza, who was convinced when they decided to opt for a trailer instead.

Felitto started cooking as a child, once bringing a George Foreman grill to class to teach his fellow students how to make — what else? — a breakfast burrito.

The Tasty Yolk is a group venture: Felitto and Bertanza count on help from Chelsea sous chef Jason Cade and Felitto’s fiancee, Allie McHale, who pitches in with the cooking and cleaning up in the trailer they opened three months ago.

The menu includes several riffs on the traditional bacon, egg and cheese sandwich. There’s The Tasty with spicy chorizo, eggs and cheddar and The Banker that features top round steak, aioli and Swiss cheese. A breakfast burrito, The Fatone, includes bacon, egg and cheese with pico.

Customers also snarf up the smashed red bliss potatoes and Cado’s Own Sauce, Cade’s top-secret recipe, which includes a laundry list of chili peppers.

Tasty Yolk steps it up a notch in the ingredient department, using chorizo from Craft Butchery in Westport and custom-made sandwich rolls delivered daily from Good Bread Bakery in Port Chester, N.Y.

The trailer is a staple at 4700 Park Ave., where sports teams from nearby Sacred Heart University stop by to fuel up between practices.

“They’ll come in groups of 10 people and they order four eggs on each sandwich,” Felitto said.

The Tasty Yolk is on Park Avenue from 7 a.m. to noon on Tuesdays, Thursdays, Fridays and Sundays. It is also a favorite at the Black Rock Farmers Market, where it’s open for business from 9 a.m. to 1 p.m. Saturdays.

On Wednesdays, the team parks on Black Rock’s main drag, Fairfield Avenue, between 7 a.m. and noon.
